Yesterday, the prestigious Michelin Guide revealed its 2019 list, comprised of 632 restaurants with 1, 2, and 3 Michelin stars. This year, the guide emphasizes that restaurants led by foreigners have become the protagonists , including a Mexican chef, Indra Carrillo , who was granted a Michelin star.
Indra Carrillo
grew up in Cancún and then studied at the Paul Bocuse Institute and has worked at prestigious restaurants such as Pujol, Ginza Kojyu, Noma, Le Ritz, Enoteca Pinchiorri, Le Bristol , among others.
During the 2017 summer, he opened “ La Condesa ” in Paris . His restaurant is characterized by its impeccable use of French technique and seasonal ingredients .
Besides winning a Michelin star, Indra Carrillo has been awarded other prizes such as the Revelation and Best New Chef awards at the 28th edition of the Culinary Guide Pudlo 2018 ,
Favorite New Restaurant of the Year 2017 by French magazine Le Point , the Young Chef Award 2016 and 2018 by the Culinary Guide Gault&Millau , Best Plate Award and Bronze Medal at the International Culinary Contest Trophée Passion by the French Culinary Academy.
Other Mexican chefs who have been awarded by the Michelin Guide include Roberto Ruíz , from Punto MX in Madrid; Paco Méndez from Hoja Santa in Barcelona; Cosme Aguilar from Casa Enrique in New York, and Carlos Gaytán from Mexique in Chicago, although this restaurant has been closed.
