The classic and original guacamole is a sauce that has won popularity out of Mexico in recent years, mainly as a snack along with crunchy nachos.
Guacamole is traditionally made with avocados , however, in some taquerías in Mexico City , the delicious sauce is, surprisingly, avocado-less .
Have you noticed that, when you prepare your tacos, the alleged guacamole always looks fresh and green as if it was just made ?
That is because they do not use avocado , and replace it with other ingredients.
But avocadoless-guac is not as bad as it seems; it is actually delicious and it is made with healthy ingredients.
So, if you are looking for a more economical option – the price of avocado is too high these days – you can try this version of guacamole.
To prepare this avocado-less guac you need:
1 Mexican squash , sliced in 4
4 green tomatoes
2 tablespoons of vegetable oil
1 jalapeño pepper , sliced in half
2 garlic cloves , peeled
½ teaspoon of salt
A little bunch of coriander
A pot with ½ liter of water
First, you must put the Mexican squash, also known as Summer squash , and the green tomatoes in the pot until the water boils , cover the pot with a lid and let it cook for 5 minutes over high heat.
Then, in a pan over medium heat, put the 2 tbsp of vegetable oil , and immediately put the jalapeño pepper until golden. Do not dispose of the oil for you will use it later.
Finally, put the Mexican squash , the tomatoes , the jalapeño pepper , the 2 garlic cloves , the coriander , and the salt in the blender along with the oil used to golden the pepper. Do not add water. Blend until the ingredients are mixed, serve it in a container, and enjoy!
But if you want to try the traditional recipe , here is how to make it.
You will need:
5 ripe avocados
1 medium onion
1 medium tomato
1 serrano pepper
The juice of half a lime
Fresh coriander
Salt
First, dice the onion , the serrano pepper, and the tomato .
Then, finely chop the coriander.
In a molcajete, an ancient Mexican mortar, put the avocados without the peel and the pit . Immediately, add the lime juice to prevent the avocados from oxidizing .
Start crushing with the molcajete stone and add the diced onion , tomato , pepper , and coriander .
Still crushing, season with salt and, if you like it, add a bit more of lime juice .
Enjoy with nachos as a snack, or as a sauce!
